This recipe is a family favorite made by my grandmother, Mabea.  Like all of her recipes, this one uses simple ingredients and techniques, and serves up hearty Appalachian-influenced flavor.  Simple enough to whip up for a routine Sunday dinner, but delectable enough for a holiday party.

1 cup quick cook oats
1.25 cups boiling water
1/2 cup butter
1 cup brown sugar
1 cup white sugar
1.5 cups flour
1 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. salt
2 beaten eggs
1 tsp. baking soda


1 cup shredded coconut
6 tbsp. cream
10 tbsp. brown sugar
6 tbsp. melted butter


For the cake:

1.     Preheat oven to 350 degrees.
2.     Cream together butter and sugar.
3.     Sift dry ingredients into sugar mixture and stir well.
4.     Pour cake mixture into greased pan and bake for 30 minutes.

For the topping:

1.     Mix all topping ingredients together.
2.     Pour evenly over top of baked cake.
3.     Place cake with topping under broiler until brown.  Watch carefully!
